Đậu xanh ngâm nở, đem nấu chín với 400ml nước lọc rồi xay nhuyễn cùng 50g đường.
Cho đậu xanh vào chảo chống dính, đun lửa nhỏ và sên cho đậu đặc sệt lại thì để nguội. Sau đó vê thành 12 viên nhỏ.
Phần vỏ trứng gà sau khi đã lấy hết lòng trứng, bạn tiến hành ngâm trứng gà trong âu nước 15 phút để trứng hết mùi tanh, dùng nước rửa qua nhiều lần cho thật sạch sẽ.
Cho bột rau câu, 2 muỗng canh sữa đặc và 400ml nước lọc vào nồi, khuấy đều cho bột rau câu tan rồi để yên 15 phút. Sau đó thêm 30g đường, đun và khuấy cho đường tan hoàn toàn thì tắt bếp.
Múc nước rau câu vào 1/3 vỏ trứng gà, giữ cố định bằng khay trứng, để nguội rồi đem dặt vào tủ lạnh khoảng 10 phút. Rau câu còn lại thì tiếp tục đun và khuấy đều với lửa thật nhỏ.
Sau đó đặt viên đậu xanh vào từng vỏ trứng rồi múc tiếp nước rau câu vào đầy mặt trứng gà, để nguội rồi cho vào tủ lạnh để đông lại là được.
